Overall, Google Sheets has been a fantastic tool in many setups (personally, professionally, as a freelancer, and more).
Pros
I like that Google Sheets makes collaboration amongst teams easy to do by simply sharing, I like that I can bring my work with me wherever I go and pull it up on a different device or platform, and I like that it's all auto-saving.
Cons
I don't like the difficulty with working offline or the difficulty with copying and pasting. I've learned to work around both though.

I use Google sheets for collaboration and to manage financial records for our business. It is simple and easy to use BUT can become less intuitive when you want to start to use it for complex calculations.
Pros
I love to be able to share and still control who has access to my Google sheets.
Collaboration is a huge plus but it also has the chance to lose data because someone from the team deletes an important cell.
The ability to easily export to xlsx or pdf files is a plus for sure.
Comments are very helpful to manage collaboration.
Cons
Complex calculations/formulas can be limited sometimes. Add-ons are available but some of them are costly.
After using Excel sheets for a while, some of the functions are overly complicated.
You should use Excel if you need complex graphs to illustrate your presentation.

All prior advantages other spreadsheet programs had like more robust formulas and being able to edit locally have now been incorporated into Google Sheets as well so Google Sheets is the leader.
The collaboration among Google Sheets is the easiest of all platform since everyone already has Google accounts and the links are easily sharable where everyone can edit the document at the same time.
Pros
Real-time collaboration with any number of peers, built-in chat, easy access from other Google Workspace products as a new feature.
Cons
Very few issues, Google Sheets can be accessed locally now as well even without internet. All prior issues with complexity of formulas have been solved now as well, Google Sheets is great.

We use Sheets daily to track inventory, track incoming-outgoing orders, as well as general organization.
Pros
Google Sheets functions almost exactly like Excel for a fraction of the price. The best part is that Sheets is sharable and multiple users can update in real-time.
Cons
A few formulas differ from those of Excel, but not a deal breaker.
